Here's my hearty and healthy gluten free waffles. My kids love waffles and I wanted a waffle that was full of nutrition and not just empty calories. These are easy to make and nutrient dense. In my effort to use less rice flour (due to it's high arsenic content) I have been using more oat, almond and sorghum flour in my recipes. Almond and oat flour are high in fiber, protein, and nutrients. I use these waffles for snacks and school lunches also. They freeze well and can be popped in the toaster or microwave for a quick breakfast or snack.
Gluten Free Oat Nut Waffles
Ingredients
- 1 1/2 cups Gluten Free Oats
- 1/2 cup Almond Flour
- 2 Tbs Chia Seeds
- 2 Tbs Oil (I use cocnut oil)
- 1/2 tsp Vanilla (optional)
- 3 Tbs Maple Syrup or Honey
- 1/2 tsp Salt
- 2 cups Water
Instructions
1. Spray waffle iron with cooking spray. Turn waffle iron on to medium heat.2. Add all ingredients to a blender and blend until smooth.3. Pour onto waffle iron and spread a thin layer over whole waffle iron. These waffles will not expand while baking like other waffles.4. Remove when light brown and fully cooked. Serve with fruit, yogurt, syrup, or favorite topping.5. These freeze well and can also be used for snacks or in lunches.
