They used to be made with wheat flour, but when the Celiac diagnosis came for my husband and children I changed these to gluten free and everyone still loves them. Gluten Free Amazing Pumpkin Cookies
Ingredients
- 1/2 cup Butter
- 1 cup Sugar
- 2 cups Gluten free All-purpose Flour ( I use King Arthurs)
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Cloves
- 1/4 tsp Salt
- 1 tsp Baking Soda
- 1 cup Pumpkin puree
- 2/3 cup chopped nuts, chocolate chips,or dried fruit (optional)
Instructions
Preheat oven to 350 degrees.1. In a stand mixer cream together butter and sugar. 2. Add egg and beat until well combined.3. In a separate bowl mix flour, spices, salt, and soda.4. Add flour mixture to creamed butter mixture. Beat on medium speed until smooth.5. Mix in nuts, chocolate chips, or dried fruit by hand until combined.6. Drop by rounded tablespoon fulls onto greased cookie sheet. 7. Bake 12-18 minutes or until cookies are light brown on top.
