Who doesn't love a good focaccia bread with some pasta or a bowl of soup? I couldn't find any in the store so I decided to make my own. After some experimenting I came up with this recipe. I like the texture and the taste and have been using the leftovers for sandwiches. And I love that it has no rice flour in it. I used sorghum flour, which is more nutrient dense and is a whole grain. With rice being high in arsenic I have been trying to cook with it less. The gluten free diet so high in rice so I like to vary the flours I use. Sorghum and Almond flour work great in this recipe.
Gluten Free Herb Focaccia Bread
Ingredients
- 1 1/2 cups Warm Water
- 2 Tbs Honey
- 1 pkg. or 2 1/2 tsp Yeast
- 1 3/4 cups Sorghum Flour
- 1/2 cup Tapioca Flour
- 1/2 cup Potato Starch Flour
- 1/2 cup Almond Flour
- 1 Tbs Xanthan Gum
- 1 tsp Salt
- 2 tsp Baking Powder
- 1/3 cup Oil (I use Olive Oil or Avocado Oil)
- 2 Eggs
- 1 Tbs Fresh Rosemary, finely chopped
- Extra Sea Salt and Olive Oil for topping
Instructions
1. In a 2 cup measuring cup combine warm water, honey and yeast. Set aside to proof.2. Add dry ingredients to a stand mixer and stir to combine. 3. Add in eggs, oil, and proofed yeast. 4. Mix on medium to high speed for 2-3 minutes until thoroughly combined. Dough will be smooth and sticky.5. Spread dough evenly into a 13 x 9 inch baking pan. To make the dimples in the dough I pour some olive oil in a little dish. Since the dough is really sticky I dip my finger in the olive oil and then poke holes in the dough with my finger.6. I add the Rosemary to a small amount of olive oil and stir to combine. I take the Rosemary and spread it on top of the dough. 7. Cover dough with plastic wrap and place dough in a warm place and let rise until about double in size or about 30 minutes. 8. When dough is almost done rising, preheat oven to 350 degrees. Place bread in the oven and bake for 30-40 minutes or until light to medium brown on top and edges.9. Remove bread from the oven when it is done. Brush top of bread with olive oil and sprinkle with salt to taste.10. When cool cut into desired shape and serve. This goes great with pasta, soups, or even as sandwiches.
