Gluten free granola bars are expensive and can have lots of sugar and preservatives. So after countless trial and error I came up with a recipe that was healthy, simple, and liked by all my kids (no easy task). Even my daughters teenage dance friends like them. These are great for breakfast, as a snack, or in lunches. They are packed with nutrients and low in sugar. The Hemp Hearts add protein, Omegas, vitamins, and fiber. And along with the oats and almond meal they are high in protein. They can be frozen for up to 2 weeks and still taste great.
Gluten free Protein Granola Bars
Ingredients
- 1 1/2 cups Gluten Free Quick Oats
- 1/2 cup Almond Flour
- 1/8 cup Honey
- 1/8 tsp Salt
- 1/3 cup Coconut oil
- 2 Tbs Hemp Hearts
Instructions
Preheat oven to 350 degrees.
1. Add all ingredients to a medium sized mixing bowl and stir until combined.2. Line an 11x7 inch rectangular baking dish with parchment paper. Press mixture into bottom of the pan making sure it is all evenly spread.3. Bake in the oven for 15-20 min. or just until edges are light brown.4. Remove from oven and let bars cool completely. Bars will harden as they cool.5. After bars have cooled completely cut into desired shape.
